OUR WORK

Our work is rooted in the five elements that tie our fields to our malthouse: earth, water, air, fire, and spirit. They guide how we grow, how we malt, and how we serve our craft beverage community.

earth

  • Healthy malt starts with healthy soil. Our regenerative farming practices like crop rotation, minimal tillage, and cover cropping help rebuild soil structure, increase biodiversity, and capture carbon. These efforts create resilient fields that produce strong, flavorful grain year after year.

  • Grain grown in balanced, living soil germinates with greater uniformity and consistency. The result is higher enzyme activity and richer flavor development in every batch of Root Shoot malt.

Water

  • Colorado’s semi-arid climate makes water stewardship critical. We use efficient center-pivot irrigation to improve moisture retention, reduce runoff, and ensure every drop of water does meaningful work.

  • Our steeping process is designed to use less water while still reaching the perfect moisture for germination. After steeping, that same water returns to the land, nourishing the fields that once grew the grain.

air

  • Air fuels everything we grow. As barley absorbs carbon dioxide and releases oxygen, our regenerative practices support additional carbon capture in the soil, building long-term resilience.

  • During germination, the grain breathes again, taking in oxygen and releasing CO₂ as enzymes activate and starches begin to convert. Careful airflow keeps the grain bed cool and humid, ensuring steady growth, full modification, and exceptional malt.

fire

  • Transformation starts with the sun, the fire that fuels each stage of growth. When its heat dries the barley at the end of the season, the plant’s long lifecycle in the field comes to a close.

  • After germination, we use controlled heat in the kiln to halt growth and develop flavor. Gentle fire produces pale malts, while higher heat deepens color into caramel, biscuit, or roast malts. Just as the sun finishes the crop in the field, the kiln finishes the grain in the drum.

  • Spirit is the full circle and essence of all we do. It is found in the patience of the farmer, the precision of the maltster, and the creativity of brewers and distillers who turn grain into flavor. Spirit lives in the beverages crafted with our malt, completing the cycle from seed to glass. It is the story of Earth, Air, Water, and Fire, carried forward with care. Spirit is who we are, distilled.
